- All shook up
- The best bartenders in the country are congregating in Chicago for a throwdown, and Chi-town is determined to hold its own.
- By David Tamarkin
- The bartenders are practicing. All over Chicago they’re standing in front of mirrors and shaking their cocktails, five servings at a time. When they pour in a new ingredient, they hold the bottle out in front of them first, presenting it to an imaginary audience. And when they spill a drop they start all over again. They’ll try to get their proportions just right—not having enough to fill up five cocktail glasses will screw them; so will having extra liquid in the shaker when they’ve finished pouring. When they’re shaking, they’re making sure to shake away from the audience. They’re nervous. But they’re smiling, always smiling. A smile will win them points, and they need all the points they can get. The National Skyy Spirits World Cocktail Competition will be here soon, and it’s time to throw down.
